Apple Berry Breakfast Crumble

Eat it for breakfast or anytime of the day, this crumble is the perfect way to use up the beautiful sweet apples that are in season right now.

Ingredients
  • 6-8 sweet eating apples (e.g. royal gala/fuji)
  • 2tbsp water
  • 2 tsp honey or maple syrup
  • 1 cup fresh or frozen mixed berries (strawberries and raspberries work well!)
  • ¾ cup rolled oats
  • 2tbsp coconut flakes
  • 1tbsp linseed
  • ½ tsp mixed spice
  • ¼ cup chopped nuts (I used hazelnuts)
  • 1tbsp honey, melted extra
  • 2tbsp olive oil
  • greek or coconut yoghurt to serve
Instructions
  1. core and slice the apples, leaving the skin on.
  2. Place in a microwave and ovensafe dish, add the water and drizzle over the 2tsp honey. Cover and microwave for 10 mins (or bake in hot oven for 30 until soft).
  3. Meanwhile combine the oats, seeds, coconut, nuts, spice, honey and olive oil in a small bowl.
  4. When the apples are done, mix through the berries then spoon the oat mix on top.
  5. Bake in a 180C oven for approx 10 mins or until top is crisp and crunchy (no lid needed)
