I hate ever having to skip breakfast, but sometimes its just too hard to get a bowl of cooked oats together in the morning when time isn’t on your side (especially if you’re cooking rolled oats from scratch!). ‘ why I love overnight oats so much. All you have to do is soak your oats the night before in your favourite milk and whatever flavourings and then in the morning you can either heat them up as an instant porridge or eat it cold like a bircher muesli. They can even be made in a jar so they are all ready to grab and go in the morning. No excuses not to eat breakfast here.

Vegetarian Lasagne is something that is either amazing or really awful. Unfortunately the awful ones are almost always the ones you order in restaurants (and its usually the only vego dish on the menu too). Don’t worry, this one is one of the amazing ones, even meat loving lasagne eaters will love it.
I have used lentils and heaps of veg in a rich tomato sauce to still give the lasagne its lovely saucy texture and have added a layer of roasted pumpkin and spinach too to break it up. The usual heavy white sauce has been replaced with a sauce made from cauliflower and ricotta, you still get the creamy flavour but not so rich.

In winter I love to make up a massive batch of soup to keep in the fridge to eat throughout the week. They are so easy to make, just put in a pot and let simmer away. I love soups to have heaps of veggies in them as well as a bit of spice with things like ginger for added immunity, this one doesn’t disappoint.

The simplest and most delicious chia pudding that doesn’t actually contain any cream. This is a great chia pudding to start with if you have never had it before. All you have to do is soak the chia seeds in enough almond milk and let them do the rest of the work.
I love having chia pudding as an easy snack (take it with you in a jar if you need) or adding oats to it and serving with fruit and yoghurt for breakfast.

Dahl is the ultimate dish, its flavoursome, quick and cheap to make and requires minimal effort. Don’t be too intimidated by the seemingly long list of ingredients, you can use whatever spices you happen to have in the cupboard and use up whatever veggies you have sitting in the fridge. I have jazzed mine up a little here using pumpkin, kale, quinoa and fresh turmeric but its all open to interpretation. If you like chilli, add more chilli, add whatever else you like. All you need is some onion, lentils, tinned tomatoes and inspiration.

Anyone who has ever grown zucchini themselves will know just how quick zucchini’s grow and how they can easily get lost in the undergrowth only to be found days later when they have become absolutely huge! growing up, mum would always use up these mega zucchinis in a chocolate and zucchini cake, a super sneaky way to hide extra veggies.
I have decided to give the old zucchini cake and upgrade into some healthy (almost carrot cake like) muffins with a little bit of spice and a whole lot of dried figs and walnuts. These gems are lovely and moist thanks to the zucchini and can be made suitable for vegans too. Beware though, these disappear quickly!

But can I share a secret with you? The banana bread you buy in cafes isn’t actually banana bread… it’s banana cake in disguise. Everyone associates banana bread with being a healthy snack choice but in truth it has so much refined sugar, oil and white flour it might as well be cake.
I wanted to create a banana bread that was healthy enough to have for a snack or breakfast but also tasted as good as the original and thats how this banana bread was born, I hope you enjoy it as much as I do. …
