Chocolate Spelt Hot Cross Buns

Ingredients
  • 3¾ cups white spelt flour (or use a mix of ½ white, ½ wholemeal spelt)
  • 1 tsp ground cinnamon
  • ½ tsp mixed spice
  • ¾ tsp salt
  • 2 tbsp Natvia Stevia for baking
  • 1¼ cups milk of choice (I used soy)
  • 1tbsp dried yeast
  • 2 tbsp black strap molasses
  • 65g butter or nuttelex/olive oil, melted
  • 180g dark chocolate, chopped
  • ¼ cup flour, extra
Instructions
  1. Mix together flour, spices, salt and stevia in a bowl.
  2. Heat the milk until just lukewarm (it should be around body temp, make sure its not too hot or you will kill your yeast), whisk in the yeast, molasses and melted butter. Pour the wet mix onto the dry ingredients in the bowl, add the chopped chocolate.
  3. Mix it all up until it forms a soft but not too sticky dough (add more flour if required).
  4. Tip the dough onto a clean workbench then knead for approx 10 minutes or until the dough is smooth and elastic. Alternatively you can do this with a dough hook on an electric mixer.
  5. Place the dough into a large, clean bowl that has been greased with a little cooking spray. Cover with clingfilm and leave in a warm place to rise until doubled in size (e.g. outside on a warm day, in your car or if its really cold, place under an electric blanket). This should take 1-2 hours depending on how warm your rising place is.
  6. When risen, punch the dough back down so it shrinks. Tip dough out onto workbench then cut into 12-15 pieces. Roll into balls then place in an oiled baking tray. Cover loosely with clingfilm then leave to rise again until they have grown another half their size (30-40 minutes or so)
  7. Meanwhile, preheat your oven to 170C. Mix up the extra flour with a little water until it forms a paste. Spoon into a piping bag or a ziplock bag with a corner cut out. when the buns have risen, pipe on your crosses.
  8. Place in the oven for 20-25 minutes until buns are golden in colour and sound hollow then tapped.
  9. Enjoy warm straight from the oven.
