Chocolate Peppermint Chia Pudding

  • 1 peppermint tea bag
  • ½ cup boiling water
  • 2tbsp chia seed
  • ½ cup soy milk
  • 2 tsp cocoa
  • 1-2tsp stevia (or any sweetener you fancy)
  • For the mousse:
  • ½ banana
  • ½ avocado
  • 2tsp honey or maple
  • ¼ tsp vanilla
  • small handful fresh peppermint leaves (or a few drops of peppermint extract)
  • 1 tbsp soy milk, if needed
  1. Place the tea bag in a mug and pour over the hot water. Leave to steep until cool.
  2. Remove the tea bag then pour cooled tea into a clean jar, add soy milk, cocoa, chia and stevia, screw lid on jar and give it a good shake. Leave to soak for an hour or overnight until all liquid is absorbed, occasionally giving the jar a shake in the first 20 mins (this stops the chia seed from settling at the bottom in a clump).
  3. Meanwhile, make the mint mousse, place all ingredients in the small bowl of a food processor or bottle blender and blend until smooth, adding a little soy to get the mixture blending if required.
