Almond Carrot Salad

  • 4 carrots
  • 1 bunch flat leaf parsley, washed
  • ½ cup almonds (toasted if preferred)
  • 1 tsp coriander seed, crushed
  • seeds of ½ large pomegranate
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • salt and freshly cracked pepper
  1. Grate the carrots (I do this in a food processor) and place in a large bowl. Chop the almonds and the parsley coarsely and add to the carrot. Add the coriander seed and pomegranate seeds and mix everything up well.
  2. Mix up the olive oil and lemon juice and season with salt and pepper, pour over the carrot salad.
  3. Serve and enjoy.
