Pumpkin and Red Rice Patties (Your New Favourite Veggie Burger)

Not too much to say about these little wonders, they are so good they need few words. Make sure you make heaps of guac here (because everything is good with guac). Make them as an easy dinner then take the leftovers for lunch the next day. 

Red rice is a a wholegrain so it retains lots of it’s original nutrients and is also also a good source of fibre and protein. I love it’s slightly nutty flavour and texture, it makes a bit of a change from brown rice  – I received mine from Forbidden Foods

Pumpkin and Red Rice Patties (Your New Favourite Veggie Burger)

  • 1½ cups cooked red rice
  • 500g peeled and chopped pumpkin
  • 1 tbsp olive oil
  • 1x 400g tin white beans (any), drained and rinsed
  • ½ red onion, finely diced
  • 2 large handfuls fresh basil, finely chopped
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 2 tsp of your favourite spicy/smokey/mexican seasoning
  • salt and pepper to taste
  • 1 tbsp coconut flour (optional)
  • Salad/wraps/salsa to serve
  • For the Guac:
  • 2 avocados, flesh only, diced
  • juice of ½ lemon
  • salt and pepper
  • sprinkle cayenne
  • ½ red onion, finely chopped
  1. Preheat oven to 200C, place chopped pumpkin on a baking tray lined with baking paper, drizzle with olive oil then bake for 30-40 minutes until soft and roasted. (To Speed this up you can par cook it in the microwave first for 5-7 minutes if short on time, then roast).
  2. Place pumpkin in a bowl with the canned beans. Mash them up until smoothish but still a little chunky (can blitz briefly in food processor if your mashing muscles aren't up to it), add rice, spices, basil, onion, salt and pepper. If its a little wet and not sticking together you can add some coconut flour. Roll into eight patties and place on a baking tray.
  3. Place in oven (200C is fine) for 15 minutes. Flip them over then return to oven for another 5 minutes or until browned.
  4. Meanwhile to make the guacamole, combine all ingredients in a bowl, mashing it to the consistency you like (I like to keep mine a little chunky, a little smooth).
  5. Serve your patties with salad or in wraps with plenty of guacamole and salsa.
